How to cook afghan rice ( qabili palau)

First time when I tried to cook Afghani rice was difficult for me .It requires  more time and attention  than other rice recipe  .Thanks to my husband and mother in law they helped me to make this delicious dish. And why not to share with you guys the  Afghani recipe rice.

Before I start I want to share this picture too:

  •  2 cup Basmati rice ( I used baghlane brand )
  • 2 boneless, skinless chicken breasts, cut in half
  •  3 medium onions
  • 3 tablespoons vegetable oil
  •  2 carrots, julienned
  • 1 teaspoon white sugar
  • 1/2 cup golden  raisin
  •  1/2 cup vegetable oil
  • 2 cup water for chicken
  •  water to cook rice
  • 1 teaspoon ground cinnamon
  • salt
  • 1 teaspoon ground cardamom
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin

Step 1:Cooking the Chicken

In a pot  over high heat add 3 tbsp. of oil , the 3 chopped  medium onions, and fry the onions until lightly golden brown. Add the  chicken meat , 2 cups water, salt, cinnamon ,black pepper and  cardamom. Cover the pot and let the chicken cooked until tender and soft  for about 15 to 20 minutes. Remove the chicken and set the sauce aside.

Step 2: Cooking Carrots and raisins

In large frying pan add carrots ,raisins , sugar and 3 tablespoons vegetable oil  , stir it until cooked and become tender.

Step 3:Cooking the rice

Usually I put the rice in water like about 2 hours . In large pot add the water to boil over medium heat, then add the rice let it cooked (not soft not firm ). Strain the rice and put it back to the same pot ,adding  the sauce , the cumin and 1/2 cup of oil . Mix all the ingredient together and make sure not breaking the rice . Place the chicken in the middle ,the carrots and raisins in the corner, cover the pot and bake the rice for 30 minutes .

Step 4: serving

In plat place the rice then the chicken and cover chicken with another layer of rice . add the carrots and raisins.

Yogurt drink (Doogh )


It’s very hot day .So let’s make something cold and healthy .Mhhhh why not yogurt drink ; or what they called in Afghanistan doogh . This drink is very healthy and testy .It’s one of my favorite drink If I can say I make it everyday .

As we know that yogurt  can boost immunity .It is a rich source of calcium. It is an excellent source of protein ,can lower cholesterol and more benefits …….

Doogh is refreshing drink made with yogurt, water, salt  and mint .Because I like cucumber I add it to my recipe .

We need :

1 cup   yogurt

½ tsp mint, dried , crushed

Salt for taste

1 cup ice

3/4 cup minced cucumber

Preparation :

Mix  yogurt and water using a hand mixer, blender or a whisk.

Add salt to taste, dried mint some cucumber and ice cubes, stir till it blends well.

Simple .



Today I want introduce you guys to one of the specialty afghan dish: Bolani. It is a flat-bread baked or fried with a potatoes filling. It can also be filled with other stuffing like green onions, spinach, lentils, or butternut.

For this recipes we need :
3 cups flour
1 tablespoon Yeast
1 tablespoon Salt
warm Water
1 lb Potatoes
2 large Onions
one bunch coriander
1 tablespoon salt
Pepper to taste

To make a dough we put the flour and salt In a mixing bowl .Then slowly keep adding the water and mix the dough .
knead the dough for 10 minutes until it is all soft and firm ,divided it to small around balls. After you are done cover it, and let it rest for an hour.
The time when the dough rest for a hour,boil the potatoes until they are soft inside. Peel and mash them with your hands or a potato masher.
In a frying pan add some oil and fry the onion until it is golden brown.
Remove the onion from the heat and add the potatoes, Chop coriander salt and pepper to it and mix it all very well.
Take the small around balls. Flat the dough and make the shape you like square or round shape .
Then you fill it with the potatoes mixture on one side ,fold the other side and close all around it with the fingers to get the triangle shape as above in the picture.
In a frying pan add some oil and fry your bolani at each side. And serve it with yogurt.
Remember to put the heat in medium level.
