As I promise you guys I am here with the delicious dessert as called Rasmalai. On of my favorite Indian dessert.

Rasmalai  is a popular Indian dessert made of panner, milk and sugar .

Ingredients for panner or Rasmalai patties( Rasgulla )  and how to make it :

4 cups milk

1/4 cup lemon juice

water

Set the milk up to boil. When the milk comes to boil (stirring frequently making sure milk do not burn on the bottom of the pan),

pour lemon juice . and stir the milk gently until the milk is completely curdled.

Strain the mixture through a cheesecloth cloth , and then press out the excess water, or place it something heavy and flat on top of the paneer for 30 minutes.

Then you can cut the panner the shape you want.

Soak the panner in chiled water .

Ingredients for milk syrup  and how to make it :

3 cups of milk

2 1/2 tablespoons of sugar( Sugar to taste )

1/2 teaspoon crush cardamom

1 tablespoon sliced  pistachios to garnish

Boil milk in a pan stirring occasionally till it is reduced 2 cups.Add sugar and stir well.

Add the rasmalai patties (rasgulla) in milk syrup and let it cook for 10 minutes.

Add the cardamaon and mix in.

Garnish with sliced pistachios.

Serve the Rasmalai chilled.

Potatoe Fritters Maakouda

Back with some good recipes for you guys . One of them is Maakouda  is a delicious and  crispy potato fritters .
They are popular in Morocco. maakouda can work as appetizer , or you can serve it as sandwitch with lettuce and tomatoes.

Ingredients :

4 potatoes.

1 egg.

2 cloves of  garlic.

1tbsp cumin.

Salt to taste.

1 tsp paprika.

¼ tsp black pepper.

2 tbsp chopped parsley and coriander.

For frying:

1 whipped egg.

Flour.

Oil.

Preparation :

Wash potatoes, and boil them.Peel the boiled potatoes and let them cool.

Mash the potatoes  add egg, parsley, coriander and spices then mix well all the ingredients.

Make small balls from the paste and press them a little by the palm of hand.

Dip the patties in egg then in flour. Fry the patties in hot oil in both sides until they are golden brown.

Place  them on paper towels to blot out excess oil.

Chicken kebab recipe

Ingredients :

  • 1 cup plain  Greek yogurt
  • 2 teaspoons paprika
  • 2 teaspoon curry
  • 1/2 teaspoon  red pepper
  • 1/2 teaspoon turmeric
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 garlic cloves, minced
  • 1/2 cup cilantro chopped
  • 2 pounds boneless skinless chicken breasts , cut into large bite-sized pieces
  • Vegetable oil, for greasing the grill

Direction :

Cut the chicken into small cubes.

In a medium bowl, combine the yogurt, paprika , curry, cilantro, red and black pepper ,lemon juice, turmeric,  salt,  and garlic.

Marinate the ingredients for 1 hour.

Thread the chicken onto bamboo skewers. Make sure to soak them on water overnight .

Preheat the grill to medium-high heat, grease well, and then grill  5 minutes on each side or until chicken is golden brown  .

Serve your skewers with salads and plain rice .

Beef Macaroni

I try to find something my son can enjoy it , specially  some vegetables because he don’t like to eat them. Finally I know that he like macaroni  .Why not to add some vegetables , ground beef and cheese .

Before I start to show you guys  how I made this recipe  . He enjoy it and I am very happy :) :)

We need :

1 lb ground beef

1 lb macaroni

1 tablespoon oil

1 cup chopped onion

1 cup chopped bell pepper

1 cup carrots julienne

1/2 cup chopped cilantro

2 garlic glove

1 tsp pepper

1 tsp chicken flavor bouillon (knorr)

salt to taste

1/2 cup cheered cheese

Direction :

In  a large saucepan , on medium heat add oil , onion ,bell pepper, cilantro , spices and sauté until soft.

Add the ground beef let everything cooked for  15 minutes until the ground beef become browned.

Add the tomato sauce cook the garnish for 10 minutes, and set it a side .

Fill a large pot with water , add the salt ,wait for the water to boil .Then add the macaroni to the water.

Continue to boil it and stir it so often to prevent sticking for about 8-10 minutes , and strain the macaroni.

Spoon 1/3 of the macaroni mixture  into casserole; top with half of the beef .

Layer with another 1/3 of the macaroni mixture, remaining beef and remaining macaroni mixture.

Top with the cheese and bake for 20 to 25 minutes.

Moroccan soup HARIRA

Hi everyone ;

Today i am going to share with you one of my favorite soup  ,we called it HARIRA.

We serve it in ramadan  with date , boiled eggs and….

Everybody cooked it  differently .But i will  show you guys how i make moroccan soup .

And I hope you guys enjoy it ,Why not try it !!

Ingredients:

1/2 pound meat cut in small pieces

1/4 cup cilantro finely chopped

1/4 cup parsely  finely  chopped

1 celery stik  chopped

3 tablespoons vegetable oil

1 large onion, grated

1 teaspoon ground cinnamon

1 tablespoon ground ginger

1 1/2 teaspoons pepper

¼  teaspoon turmeric

1 tablespoon  salt

1 can of chickpeas

6 large tomatoes pureed

1 cup  lentils,  washed and soaked for 1 hour .

3 tablespoons tomato paste

1/4 cup   rice

1 cup flour

2 litre of water

Direction :

Over medium heats add the oil and meat and let it cooked until brown . Add the cilantro, parsley, celery, onion, tomatoes,  spices and water.

Cook the soup on pressure for 45 minutes.

Add  the tomato paste and the  chickpeas.

Whisk flour with 1 cup water in bowl. Pour the  flour mixture to the harira slowly and stir the soup.

Add the rice and let it cook for another 15 minutes.

You can serve it with lemon .Enjoy :)

 

 

 

Flat bread stuffed with vegetables (msemen m3amar)

What you need  for this recipe :

Dough:

2 cup flour

Salt

1 tsp dried yeast

warm water

The filling:

1 chopped onion

1 cup carrots julienne

1 cup chopped bell pepper

salt ,  black pepper and paprika to taste

1 cup chopped cilantro

oil

Prepation:

To make the filling :

In large  pan add 1 tablespoon oil ,onion, bell pepper ,carrots, cilantro ,salt , black pepper and paprika .Let all the ingredients cooked like 15 minutes.Then set it a side to cool down.

To make dough :

Mix flour ,salt,  and yeast in a large bowl, then gradually add warm water  using your hands. knead the dough nicely for 20 minutes until the dough becomes soft.

Oil your hands and form the dough into small balls and let them rest for 20 minutes.

Brush your working surface with oil .Take a ball of dough and flatten it into a very thin  circle.

Put one tablespoon of filling and spread it  on the circle.

Fold one side into the center and the other side to the center too.

Bring the right and left edge to form a square.

Get another ball ,flatten it into form of pizza,add one tablespoon garnich and put the finished one  we made before in the middle of the other one .

Then fold all the side to make square of dough in side another one ….

Continue this way tell you finish all your small balls of dough  ,making  one big square but it have too much layer …

Flatten it  sprinkle some cheese on the top  (optinal ) , put it on preheated oven 400 degree/20min .

Easy dinner meals (chapli kabab)

Well. Everyday  I have this question.What we can cook for dinner or lunch today?

And I am sure every women have the same question…….?

So,after my husband went to work  then  taking care of the house and  my little son ….

You know guys where I go immediately …My kitchen ,being there is very fun .Actually I like

Cooking ….and taking pictures of the final touch, make me happy. I like photography too…..

Cooking is like drawing instead using brushes and some colors.

Getting some ingredients and mixing it together to give us a good picture mean a delicious recipe.

Finally I find something to cook today  :Chapli Kabab.

Chapli kabab is flat pattie made from ground beef .It’s the main disch in pakistan and afghanistan .

Chapli mean flat in pashto language .

All we need :

500 gram minced beef

1 medium  onion chopped

2 eggs

3 tbsp flour

½ tsp salt

1 tsp ginger paste

1 tsp garlic paste

1 tsp cumin

1 tsp coriander powder

½ cup of fresh coriander leaves

2 green chellies chopped

1 large tomato chopped

Oil for frying

Preparation:

In a bowl mix all the ingredients together very well and leave the meat dough in the refrigerator for 1 hour.

Divide the dough on small balls then make them into flat patties and fry in a little oil .

Cook the patties on both side until become brown.

Serve Chapli Kabab as burger or with some plain rice and salad.

Fried bread dough recipes (Msemen)

Ingredients:

2 cup of white flour
1 cup semolina
Salt to taste
1 tsp dried yeast
warm water
½ tablespoon of sugar
vegetable oil
2 tablespoons fine semolina

Preparation:

Mix flour ,1 cup semolina, salt, sugar and yeast in a large bowl, then gradually add warm water  using your hands. knead the dough nicely for 20 minutes until the dough becomes soft.
Oil your hands and form the dough into small balls and let them rest for 20 minutes. Brush your working surface with oil .Take a ball of dough and flatten it into a very thin  circle.
Then sprinkle with a little bit of semolina and vegetable oil.
Fold one side into the center and the other side to the center too.
Bring the right and left edge to form a square.
Cover the square shape of dough and let them relax for about 15 minutes.

Heat non-stick frying pan over medium heat. sprinkle it with a little it bit of oil .Flat one of the square .
Place the Msemen  Square in the heated pan and let it cook on each side until becomes golden .

You can serve your Msemen with honey or jam….

Make sure each time you fold the thin circle of dough sprinkle  oil and semolina , to have the  layers on your Msemen :

Easy crepes recipe

Ingredients :

  • 2 cups flour
  • 2 cups milk
  • 6 tablespoons butter, melted
  • 3 eggs
  • 4 tablespoons  sugar
  • 1/4 teaspoon salt

Preparation:

In blender combine flour, butter,sugar, eggs and salt .Add the milk slowly .Mix all the ingredients well until the batter is a liquid consistency.
Set  the crepe batter in the refrigerator for 1 hour.

Over  medium heat. Melt a little butter and pour 3 tablespoon of batter crepe and let it cooked on both side .

This  thin pancakes can be filled with fruit or chocolate for dessert.
