Potatoe Fritters Maakouda


Back with some good recipes for you guys . One of them is Maakouda  is a delicious and  crispy potato fritters .
They are popular in Morocco. maakouda can work as appetizer , or you can serve it as sandwitch with lettuce and tomatoes.

Ingredients :

4 potatoes.

1 egg.

2 cloves of  garlic.

1tbsp cumin.

Salt to taste.

1 tsp paprika.

¼ tsp black pepper.

2 tbsp chopped parsley and coriander.

For frying:

1 whipped egg.



Preparation :

Wash potatoes, and boil them.Peel the boiled potatoes and let them cool.

Mash the potatoes  add egg, parsley, coriander and spices then mix well all the ingredients.

Make small balls from the paste and press them a little by the palm of hand.

Dip the patties in egg then in flour. Fry the patties in hot oil in both sides until they are golden brown.

Place  them on paper towels to blot out excess oil.

  1. I’ve tried Maakouda as a big thick cake, which also has peas and carrots. It takes a while to cook, so I guess this is the quicker version. It looks good!

    • Actually on big one we don’t put peas and carrots just potato and eggs and spices the only thing different we don’t mash potato …… But I promise you to post it next time ……. Thanks again following my post…I appreciate it :)

  2. Wow this is so similar to the aloo tikis that are made in India but without eggs..I didn’t know that Moroccan cuisine can be so close to Indian cuisine :). Thanks for the intro !
    Rasmalai is also an Indian sweet but would wait for your post :).

    • The Moroccan salads (onion,tomatoe,cilantro,lime juice ,black pepper ,salt and olive oil) and the white sauce is afghan doogh you can check my blog to get the recipe for doogh :)
