How to make easy meat balls

Ingredients:

1/5 lb ground beef

2 teaspoons paprika divided ( 1 teaspoon for meat and 1 tsp. for sauce)

2 teaspoons cumin divided ( 1 teaspoon for meat and 1 tsp. for sauce )

½ teaspoon black pepper

1 tablespoon chopped parsley

1 teaspoon garlic paste

1 large tomato chopped

¼ cup oil

1 onion chopped

Direction:

In large bowl place the meat , paprika ,cumin , black pepper and parsley .And mash with your hands to combine

all the ingredients.Roll meat into 1 inch balls.

In large pan add oil and let the balls  cooked for 1 minute each side till they become brown .

Remove the meatballs from the oil and set them aside.

Making the sauce :

On the same large pan add the garlic ,the onion .let them cook until tender,  add the tomato and the rest of the spices.

Cook 10-15 minutes , add the meat balls , cover the pan and simmer for about 10 minutes, until the meatballs are cooked trough.

Serve warm with bread and cup of tee.

Cauliflower curry

aloo gobi

Ingredient:

1 medium cauliflower

2 tbsp. oil

1 medium onion chopped

Ginger

Garlic

2 large tomatoes chopped

½ tsp. turmeric powder

1 tsp. coriander powder

Red chili to taste

Salt to taste

Water

Fresh coriander for garnish

Direction :

First Heat oil in large sauce pan , add the chopped onion stir and cook until become golden and translucent.

Add coriander powder, turmeric,  1 tsp. of salt, and  red chili to taste. Mix well and sauté for 3-4 minutes.

Add ginger , garlic , and tomatoes .Mix , stir frequently and then  add the tomatoes to the mixtute .

leave it to cook for 10 minutes stirring occasionally to not let the tomatoes stick on the bottom .

Add the cauliflower , and the water  ,cover and allow to simmer for 20 minutes.

sprinkle chopped coriander leaves on the top ..

Serve with bread or plain rice ……

Easy desserts ideas

jalebi

Jalebi is one of Pakistani-indian dessert …..Its easy to make very tasty sweet.

Ingredient :

Batter :

1 cup of all purpose flower

1 tsp besan flour

¾ warm water

1 tsp. oil

1 tsp rapid rise yeast

1 tbsp yogurt

A pinch of yellow color

Syrup:

1 and ½ cup sugar

1 cup of water

1 tsp lime juice

Direction :

Step1 : How to make the batter.

In small bowl soak yeast in warm water for 5 to 10 minutes.

In large bowl, add flour, food color , besan ,oil and yogurt , mix all the ingredients well ,add the yeast , then add the warm water little by little .

Mix the batter very well making sure there are no lumps.

Allow the batter to rest 30 minutes.

Step2 : How to make the syrup.

Heat sauce pan with water, sugar . Cook them for 15 minutes on medium heat until it comes into stirring consistency. Then add the lemon juice, make sure the the syrup is not too thick.

Step3: Frying  the Jalebi.

Heat oil in large pan for frying jalebi’ s.

You can fill the batter into a Ziploc bag and make a hole on the bottom of the bag or you can use an empty bottle ( Ketchup bottle ).

Squeeze out the battle into hot oil in circular motion .

Fry till it is crispy and golden brown.

Remove the jalebi from pan  and palce it on tissues  to absorb the excess of oil. Put it into syrup.

Serve them hot or let them cool ….

 

Egg dish recipe

Shakshouka is Moroccan recipe made of eggs , onion and tomato. Shakshouka can be eaten for breakfast,lunch or dinner.

You can serve shakshouka with warm bread .

Ingredients:

1 tbsp olive oil

½ medium chopped onion

2 large diced tomatoes

Pinch of sugar

Salt and pepper to taste

1 tsp chili powder

5-6 eggs

½ tbsp. fresh chopped parsley

 Direction:

Heat oil in large pan , add chopped onion, and then fry until become soft tender for few minutes. Add salt, pepper , chilli pepper and garlic continue cooking , stirring frequently the mixture for about 2 minutes.

Add tomatoes to the rest of the ingredients, stir well , reduce the heat and simmer about 15 minutes.

Taste the sauce and adjust the spices to your tastes.

Crack the eggs, one by one  making space  over the sauce , cover the pan , let it cooked about 10 minutes until the sauce has slightly reduce …

Red lentil soup

At the dinner time , I make sure cook something so light and healthy ….

So I decide to cook something different .And that was the plan making soup : red lentil soup….

It is easy to make and It was tasty than I though…….

 

Ingredients :

3 tablespoon oil

2 cup red lentils ,washed and drained

1 teaspoon garlic paste

1 teaspoon ginger paste

1 cup tomato sauce

salt to taste

1/2  teaspoon black pepper

½ teaspoon turmeric

½ teaspoon curry

1 chopped onion

1 tablespoon chopped cilantro

4 cup water

Directions :

Heat the oil in large pot over  medium heat and add the chopped onion, stir and cook it until tender for few minutes.

Then add the ginger and garlic paste, salt, black pepper, turmeric , curry and the red lentils. Mix all the ingredients ,stir it  and cook for 1 minute .

Add tomato sauce and 4 cup of water .Bring to boil ,cover and simmer 30 minutes until the lentils become tender.

Once simmering add cilantro . Use the blender to puree the soup .

Our soup is ready .Serve it warm with bread and sprinkle some parsley …

Samosa

I love Indian food. One of my husband family member invite us on Eid day. We had too much fun …The food was excellent …. Most of the time  I cook at home either Afghani  or Moroccan dishes …….. So my husband all the time ask me : Can you please cook us Samosa ?

So finely I did ….. And I will share with you guys Eid food and my samosa recipe ……Here we go :

For the recipe all we need :

–         1 package  won ton wrap

–          2 large potatoes boiled

–          1 tsp. garlic paste

–          1 chopped onion

–          3 tablespoon oil

–          Coriander seed

–          1 tablespoon cilantro finely chopped

–          1/2  teaspoon turmeric

–          1/2 red pepper

–          Salt

–          Oil for frying

Direction:

Heat 3 tbsp. oil add the garlic,  coriander seed ,Then add the onion and sauté till light brown .

Add fresh cilantro, turmeric, salt and red pepper.

Cook it for few minutes , then add the potatoes. Mix all the ingredients and let it cook another 2 minutes.

In clean surface place 1 wrap .Put one tablespoon of the filling , press the end firmly making  the shape you want based on the wrap you buy ( when I have time I make the doogh at home ) .

Deep fry samosa on low medium heat until light brown:

Place the samosa on paper towel to absorb the excess of  the oil :

Semolina bread recipe ( Harsha)

Harsha is Moroccan pan fried bread made from semolina flour. We serve harsha on tea time or breakfast with crème cheese, honey or jam. But I prefer eat it with olive oil …….

Ingredients:

2 cups fine semolina flour

3 tbsp sugar

2 teaspoons baking powder

Salt to taste

½ cup soft butter

½ cup warm water

¼ cup semolina flour

Direction:

In mixing bowl add the semolina flour, sugar, baking powder, and salt .

Add the butter to the dry mixture, and mix well using your hands.

Add  the water and mix until a dough forms. It should be moist .Add water if necessary.

Shape the dough into  ball and leave it to rest a few minutes.

Preheat a griddle over medium heat. Sprinkle  the ball with some  semolina and place it in the griddle then  flatten it .

Cook the harsha about 10 minutes on each side.

Serve harsha warm with cream cheese or jam…..

Moroccan eggplant salad ( zaalouk)

Zaalouk is Moroccan eggplant  salad made with roasted or grilled  eggplant, tomato, garlic, olive oil and spices.

We Serve Zaalouk with the main dishes as tagines ….. or you can serve it with pita bread .

You will need :

2 Black eggplants

2 small tomatoes ,peeled, seed and chopped

1 tbsp garlic paste

½ tsp ground cumin

½ tsp paprika

¼ tsp cayenne pepper

2 tbsp finely chopped coriander leaves

3 tbsp lemon juice

2 tbsp olive oil

Preparation :

Roast or grill the eggplant until they get soft inside. leave  the eggplant aside to cool down , then peel them  .

In saucepan add the 2 tbsp. olive oil, garlic, spices, coriander leaves  ,  tomatoes ,  let it cook for few minute and then add the eggplant. Mash the eggplant with fork and make sure all the ingredients are mixed together .Continue stir until the liquid is absorbed for 20 minutes . Add the lemon juice .

Zaalouk is ready .Serve it  warm or cold.

How to cook afghani rice on video

 

Ingredients:

  •  2 cup Basmati rice ( I used baghlane brand )
  • 2  boneless, skinless chicken breasts, cut in half
  • 3  medium onions
  • 3  tablespoons vegetable oil
  •  2  carrots, julienned
  • 1 teaspoon  white sugar
  • 1/2   cup golden  raisin
  •  1/2  cup vegetable oil
  • 2 cup  water for chicken
  •  water   to cook rice
  • 1 teaspoon  ground cinnamon
  • salt
  • 1 teaspoon  ground cardamom
  • 1 teaspoon  black pepper
  • 1 teaspoon  ground cumin

Step 1:Cooking the rice

Usually I put the rice in water like about 2 hours. In large pot  add the water to boil over medium

heat,then add the rice let it cooked (not soft not firm ).Then Strain the rice .

Step2 : cooking the chicken

In a pot  over high heat add 3 tbsp. of oil , the 3 chopped  medium onions, and fry the onions until lightly golden brown.

Add the  chicken meat , 2 cups water, Cover  the pot and let the chicken cooked until tender and soft  for about 15 to 20 minutes.

Remove the chicken and set the sauce aside.

Step 3: Cooking Carrots and raisins

In large frying pan add carrots ,raisins ,sugar and 3 tablespoons vegetable oil  ,

stir it until cooked and become tender.Put the rice on the same pot ,adding  the

sauce. Mix all the ingredient together and make sure not breaking the rice .

Place the chicken in one side ,the carrots

and raisins in the other side , cover the pot and bake the rice for 30 minutes .

Step 4: serving

In plat place the rice then the chicken and cover chicken with another layer of rice .

Add the carrots and raisins.

Seekh kabab

Ingredients:

half kg ground beef

1 chopped onion

1 tsp  garlic paste

1 tsp ginger paste

1 tb paprika

2 hot green chili

1 tsp  black pepper powder

1/2 tsp turmeric

1 tsp cumin  powder

salt to tast

Chopped coriander

if you want add 2 eggs (optinal)

Oil for brushing .

Direction:

Mix all the ingredients together and set it for one hour.

Place in skewers.

In grill pan add 1 tsp oil and cooked the kebab on both side .You can also barbeque them.

The seekh kabab is ready to serve with salads, chutney and bread…Enjoy.

Moroccan spinach or (Bakkoula) is very tasty and healthy salad .

The recipe is very easy to make .

 

Ingredients:

2 bunch of spinach

1 cup of parsley and cilantro chopped

1 tablespoon of  cumin

1 tsp paprika

2 tablespoon of lemon juice

t teaspoon of salt

5 gloves of garlic

1 cup olives

1 tablespoon olive oil

Direction :

Wash the spinach well and chop it into small pieces.

Steam the spinach for 10 minutes .If you use Bakoula steam it for 30 minutes.

In large pan add olive oil ,parsley, cilantro , garlic ,lemon juice and spices .

Then add gradually spinach and mix all the ingredients very well and let it cook for about 3 minutes.

Serve Moroccan spinach warm with bread and decorating it with olives and pickle carrots.

Enjoy.

Ingredients :

1 pack spring roll pastry (20 sheets)

1 egg (beaten)

2 carrots (thinly sliced)

1 cup  vermicelli rice noodles (soaked in hot water )

1 cup chopped onion

2 clove garlics minced

1 cup chicken breast cut it cubes

1 cup chopped cabbage

salt and pepper to taste

Vegetable oil (enough to deep-fry)

Direction :

Heat the frying pan with a little bit of vegetable oil, then add the garlic and  onion.

Stir fry until brown and then add the  chicken and let it cooked for 10 minutes then add the cabbage  and carrots.

Continue to stir fry for 3 minutes and add the vermicelli rice noodles , salt and pepper stir fry for 2 minutes, remove the filling a side  to cool.

Place the wrap on your surface and add 1 tablespoon of filling.

Take the bottom of your wrap and fold it over top of the filling.

Fold the sides in towards the center .Brush the top corner with beaten egg , continue rolling until it close .

heat the frying pan add the vegetable oil and cook the spring roll until brown and crispy.

Note : you can add the red pepper ( optional).

Moroccan baghrir recipe

Moroocan cuisine is rich with a lot of recipes . As we know word crepe is French word .

But in morocco we called it baghrir . it’ s look like pancake with thousand holes .

Baghrer is  spongy and made with semolina or flour.

Usually we cook them to break Ramadan fast .They are popular too for breakfast, as a snack.

Ingredient :

1cup semolina

1 cup all-purpose flour

1 (1/4-ounce) package active dry yeast

½ teaspoon salt

½ teaspoon sugar

1 egg

warm water

Preparation :

In a large bowl, mix all the dry ingredients: semolina, flour, yeast, sugar, salt. Mix well.

Then  add water little by little you can use your hand or blender .

Heat a medium skillet over medium heat until very hot. Pour a ladle-full of batter onto the skillet,

You will see holes forming at the top of it.

Cook 1 -2 minutes, until the crepe is dry and has lots of holes.

Serve with butter and honey or jam.

How to make baked zucchini

Ingredients :

2 large Zucchini

1 cup semoulina

Garlic  Powder

Salt

Pepper

paprika

2 large Eggs

Olive oil

Preparation :

1- Wash the zucchini and cut them into sticks.

2- Beat the 2 large eggs.

3- Mix the semolina , salt, garlic powder , paprika and pepper.

4- Dip the zucchini on the eggs.

5- Turn the zucchini sticks around in the semolina mixture.

6- Brush the baking sheet with olive oil and place the zukkini pieces on it.

7- Bake them for 20 minutes.

8- Let them cool and you can serve it with yogurt sauce.
