Moroccan eggplant salad ( zaalouk)


Zaalouk is Moroccan eggplant  salad made with roasted or grilled  eggplant, tomato, garlic, olive oil and spices.

We Serve Zaalouk with the main dishes as tagines ….. or you can serve it with pita bread .

You will need :

2 Black eggplants

2 small tomatoes ,peeled, seed and chopped

1 tbsp garlic paste

½ tsp ground cumin

½ tsp paprika

¼ tsp cayenne pepper

2 tbsp finely chopped coriander leaves

3 tbsp lemon juice

2 tbsp olive oil

Preparation :

Roast or grill the eggplant until they get soft inside. leave  the eggplant aside to cool down , then peel them  .

In saucepan add the 2 tbsp. olive oil, garlic, spices, coriander leaves  ,  tomatoes ,  let it cook for few minute and then add the eggplant. Mash the eggplant with fork and make sure all the ingredients are mixed together .Continue stir until the liquid is absorbed for 20 minutes . Add the lemon juice .

Zaalouk is ready .Serve it  warm or cold.

  1. Yay, pretty cool to check out your blog and the first post I see is a salad made with eggplant! I just picked up a few yesterday at the farmers market and was going to search for a new recipe using eggplant, but now I don’t have too cause we can try this recipe out tomorrow for lunch! It looks yummy by the way!

  2. I love this type of salads, especially with grilled meats. I make something very similar, but also add chopped green pepper and jalapenos.
