Harsha is Moroccan pan fried bread made from semolina flour. We serve harsha on tea time or breakfast with crème cheese, honey or jam. But I prefer eat it with olive oil …….
Ingredients:
2 cups fine semolina flour
3 tbsp sugar
2 teaspoons baking powder
Salt to taste
½ cup soft butter
½ cup warm water
¼ cup semolina flour
Direction:
In mixing bowl add the semolina flour, sugar, baking powder, and salt .
Add the butter to the dry mixture, and mix well using your hands.
Add the water and mix until a dough forms. It should be moist .Add water if necessary.
Shape the dough into ball and leave it to rest a few minutes.
Preheat a griddle over medium heat. Sprinkle the ball with some semolina and place it in the griddle then flatten it .
Cook the harsha about 10 minutes on each side.
Serve harsha warm with cream cheese or jam…..
