I was busy these days I didn’t post any of my recipes …I did take pictures or record videos..
I am not lazy but being busy with the little one …He need more attention these days teaching
him languages …and …and …..
I quit working on my computer specially Wednesday and Thursday ..Those my husband off days…
We need to go outside ..spending time with family ..etc
But today I decide to finish my work before his days off coming ..and I want to teach you guys how to make
Moroccan chicken with olives ..We do make it with preserved lemons too ..I didn’t have it at that time
because you can not find it in the store … Preserved lemon will be my next recipe …but now we concentrate on
how to cook the Moroccan chicken with olives .
1 chopped onion
3 gloves garlic finely chopped
1 teaspoon salt
1 teaspoon pepper
1 teaspoon fresh ginger
1 teaspoon turmeric
1 pinch of saffron
1/2 cup green olives
1/2 chicken skin removed, cut into pieces
1/3 cup olive oil
In medium bowl I marinate chicken with ginger, garlic, spices, cilantro , parsley and one tablespoon olive oil .
Set the marinated chicken a side for few minutes.
In small pot on medium heat add the rest of olive oil , the marinated chicken …then add the chopped onion.
Cook for 10 minutes and stir time to time .
After 10 minutes add the water , cover the pot and continue cooking until the chicken become tender .
When the chicken cooked ,transfer it to a plate and cover. Continue cooking the sauce over medium heat ,
stirring occasionally until the onion form a blended
witch separates from the oils.
Add the olives and simmer for 5 minutes.
Place the chicken on a serving plate ,pour the onion sauce over the top and side
Serve with bread .

3 large boiled carrots cut them small cubes
3 large boiled potatoes cut them in small cubes as well
6 oz cherry tomatoes cut them on half
1 small red bell pepper cut it on small cube
1 large boiled beet
1 can corn half I use it on rice and tuna salad and the half of it for decoration my plate
3 boiled eggs
For dressing we need :
1/4 cup finely chopped onion 2 tablespoon chopped parsley salt to taste pepper to taste 4 tablespoons vegetable oil 2 tablespoons lemon juice
Rice and tuna salad we need :
1 cup cooked white rice
1/4 cup mayonnaise
1/4 to 1/2 cup tuna
4 tablespoons vegetable oil
pepper and salt to taste
3 boiled eggs
lettuce leaves to decorate the plate.
In a small bowl, place the rice ,tuna, corn, oil, seasoning salt and pepper then add
mayonnaise Gently stir to mix everything well.
Put the salad in bowl .
In bowl we mix the onion, cilantro, oil, salt and pepper to taste then lemon juice or you can use vinegar .
Add 1 table spoon dressing on carrot ,potato ,cherry tomato and beets, i leave the red bell pepper and corn plain.
Flip the rice and tuna salad on the lettuce leaves then add the other salads around it .

500 gram minced beef
1 large tomato chopped
1 cup green onion chopped
½ cup of fresh coriander leaves
1 small onion chopped
1 tsp garlic paste
salt and pepper to taste
1 tablespoon spice mix for chappli kabab
3 to 4 tablespoon flour
2 green chilies chopped ( optional )
Oil for frying
In a bowl mix all the ingredients together very well and leave the meat dough in the refrigerator for 1 hour.
Divide the dough on small balls then make them into flat patties and fry in a little oil .
Cook the patties on both side until become brown.
Serve Chapli Kabab as burger or with some plain rice and salad.
