Moroccan soup bessara or green split peas soup

In winter usually mom cook soup , but my favorite one is green  split peas soup or fava bean.

The Arabic word for this dish is bessara witch can be served soup or dip .

Bessara made with dried fava bean or split green pea , or you can mix both….

if you want to cook it with dried fava bean you should soak it in water overnight.

The secret of this soup is cumin .. witch give it a very nice flavor …and olive oil complete the work .

Bessara is easy to make …

Ingredients :

2 cups green split peas

3 tablespoons olive oil

1 and half teaspoon ground cumin

1 and half teaspoon paprika

salt to taste

2 gloves garlic peeled

4 cups water

Direction :

Place the green peas ,garlic, water, salt, 1 tablespoon olive oil , in medium sized sauce pan

and bring it to boil.

Simmer for 1 hour until the green peas  are soft .

Add the cumin and paprika .

Puree the liquid using the hand-held blender.

Add a little bit of water if the liquid is too thick .

Serve the soup into bowl, sprinkle with paprika and cumin, drizzle

with extra-virgin olive oil .

Serve bessara warm with bread and you can add lemeon juice .
